Grissini

 HI
How did you all enjoy my regional tour for the alphabets A to F??I enjoyed myself thoroughly and for this week it is a baking edition. I will be baking for the alphabets from G to L.Grisinni are tall, thin crunchy Italian bread sticks. They can be baked plain or can be flavoured with herbs and these are perfect compliments a bowl of soup. These are baked from simple pizza like dough but have more olive oil in them which helps to get that crunchy factor very characteristic of Grissini. Here is a very simple recipe for that crunchy Breadstick

INGREDIENTS
All purpose flour      1 1/2cup
Wheat flour              1/2 cup
Warm water              3/4 cup
Active dry yeast        1tbsp

Honey                       1tsp
Olive oil                      3tbsp
Salt                            1 1/2 tsp
Sesame                     1tbsp
PREPARATION
Add honey, warm water and yeast together. Let it prove for 10 minutes
Mix both the flours and salt together
Now add the yeast liquid to this and mix well
Add the oil and knead it into a smooth dough
Transfer this to a wooden board and knead for another 5 minutes so that it forms a pliable dough
Form a small rectangular slab from this and keep it in a pan and let it rest for 1 hr so that it doubles in volume
Now cut small equal portions from this and roll each into thin long breadstick…add sesame to some of these
Keep each a little apart from each other and let it again prove for 20 minutes
Preheat the oven to 210C
Bake them for 15-20 minutes
Serve warm or cold
