Mambazha Payasam / Mango Payasam

 Varieties of mangoes can be seen here….Finally the mango season is here and i can cook more dishes with this favourite ingredient for Blogging Marathon #40 with the theme of Mango. So for day 1 it is payasam with this king of fruits.

INGREDIENTS
Mango pulp                     from 2 mangoes(Alphonso)
Jaggery                             3/4 cup
Thick coconut milk            1/2 cup
Cardamom powder            1/4 tsp
Ghee                                  1tsp
Cashew                              few

PREPARATION
Take out the pulp from the mango. Run it in a mixer to get a smooth pulp. Keep it aside
Grate the jaggery. Add 1/4 cup of water , heat it so that the jaggery dissolves.
Now strain it to remove the impurities.
Boil this for 2-3 minutes, add the mango pulp and boil in a low flame till it starts to thicken.Sprinkle the cardamom powder, mix well and switch off the fire
Now add 1/4-1.2 cup of water to 1/2 cup of fresh coconut. Grind it. strain it through a sieve to get thick coconut milk. Keep it aside
When the mango jaggery mixture has cooled completely, add the coconut milk, mix well
Heat ghee in a pan, saute the cashew till it starts to brown. Add this to the prepared payasam
Serve when slightly cool.
