Carrot Dosai

Here is another quick fix breakfast recipe. Eating the regular dosai can be boring and adding veggies to the dosai might be interesting too. So here is a simple recipe loaded with beta carotene.
Rice flour                  1 cup
All purpose flour       1/4 cup
Grated carrot              1 cup
Grated coconut           1/2 cup
Green chillies               2
Asafoetida                    1/4 tsp
Salt                                3/4 tsp
Oil                                 3-4 tbsp

Grate the carrot and scrape the coconut
Grind the carrot, coconut and chillies together in a smooth paste
Add this vege paste, both the flours, salt and enough water to make it into a dropping consistency
Heat a dosai tawa, and when sufficiently hot, drop a ladle full of the batter in the center, spread it immediately with a ladle in circular motion
Drizzle oil around it and cook in medium flame
Flip it over to the other side when it has slightly browned on one side
Take it out when the other side is cooked too(Which might take only 1 minute)
Make all the dosai’s the same way
