A vibrant mint flavoured creamy fresh green pea soup.
Season of soup begins with the onset of winter. Technically, we Chennaiites do not experience winters as such. However, the season vegetables of winter have been seen at the grocer. Fresh peas shelled and unshelled are flooding the market. Well now flooding literally. The recent floods due to the cyclone Michaung has created havoc in the city. As the city limps back to normalcy, the market is back to business with fresh vegetables including fresh peas. Recipe hunt begins and the one that top the list is this Fresh green pea mint soup.
These soups differ from the clear soups in the texture. These as the name suggests are creamier in texture and are thicker than clear soups. Generally, in these soups, all the vegetables are pureed to get the creamy thick soup. This fresh green pea mint soup is a classic example of the rich and creamy soup.
In this soup, I have used the shelled fresh peas which is not blanched. You can choose to use the frozen fresh peas too. The taste and color of the soup greatly depend on the freshness of the peas.
Here again the mint leaves that are fresh greatly adds to the colour of the soup.
In the preparation of this soup, I am using both red onions and spring onions. The red onions add to the flavour and the green adds to the colour.
Few pods of garlic add to the flavor of any dish. Feel free to not add this if you do not like the flavor.
The fat that is used in this soup is olive oil. You can substitute it with butter to get the richness to the soup.
The only purpose of the cream in this soup is to elevate the richness of the soup.
I would love to serve any soup with slices of sour dough bread like the sundried sourdough bread or bread sticks like onion cheese bread sticks,

Heat the pressure pan. Add olive oil and once that heat up add the bayleaf. |

Now add the stalk of spring onions and saute for a minute. |

Remove the bay leaf. |

Now transfer this to the blender jar and blend it into a smooth puree. |

Transfer it back to the pressure pan, add salt and mix well. |

Add more water to get the required consistency and heat it for a minute or two. |

Transfer it back to the serving bowl, top it with fresh cream and pepper powder and serve warm.. |

Green peas soup looks hearty veena! Love that beautiful green. Love green peas, that too when we get fresh in the market, miss mylapore south mada street, all shops lined with fresh fresh beans and peas for the reason!! A must try soup for this season!
