When I first heard the name , I thought it was a variety of biscuits, something baked but was pleasantly surprised to hear that it was another version of our own Ulundu vadai or medhu vadai.Biscuit ambado is a konkani version of medhu vadai. Here they add coconut, coriander , curry leaves and green chillies to the batter. This vadai is a perfect snack for your kid and can be served with any chutney of your choice

Soak urad dhal in water for 1 hr |

Meanwhile chop coriander, chilly, curry leaves and keep aside |

Drain the water completely from the dal and grind it smooth in a mixer or grind. Add very little water if necessary |

Now add coriander, curry leaves, salt, chilly and coconut to this and mix well |

Now heat oil in a deep pan and when sufficiently hot, lower the heat and drop small blobs of this batter in hot oil carefully , so that the oildoes not splatter on your hand.Increase the heat and fry for 2 minutes |

Now with a slotted ladle, turn each one the other side and cook on this side too, till the vada becomes golden brown in colour |

Now slowly take it out with a slotted ladle and drain it on an absorbent paper |

Serve warm with a chutney of your choice |

Ah.very nice name Veena..good one..Even my Mom makes this vada with fresh coconut pieces but never called it by this name though..must update her..heheeh

When i saw the name i thought that this was some sort of fritters with biscuit in it. And this konkani version medhu vada tempts me a lot.
Very interesting name and also the addition of coconut is cool too. A great treat with tea on rainy evenings like today 🙂
I too thought it as biscuit recipe. Unique name!!! Adding coconut is very new to me, will give a try on sometime.
