1 cup Carrot I used 2 medium sized carrots
1 tbsp Black gram dal
2 Red chillies
2 tsp Sesame seeds
1/4 tsp Asafoetida
To Taste Salt
1 tsp Oil
FOR TEMPERING
1 tsp Oil
1/2 tsp Mustard seeds

I love carrots and I use it regularly in salads, kosambiri, payasam, flat bread, Muthia and addition to that list is this Carrot chutney.This month for the shhhh cooking secrectly challenge, the decided theme was chutneys. For this challenge, I am paired with Prathima who blogs at Prathu’s food . She challenged me to use carrot and sesame seeds . As we love thogayal and chutney , I loved to explore this combination and totally loved it. This Carrot chutney can be paired with dosa, roti or even plain white rice

Carrots have numerous benefits when we eat it and some of them are:

1. Carrots are rich in beta carotene which is then converted to vitamin A and hence improves vision

2. It is said to prevent cancer

3. It helps prevent infections and helps to regain a healthier skin

5. It is supposed to help in preventing stroke  and  heart diseases

 

 

 

Steps

Clean the carrots and chop it into small pieces

Heat oil in a pan and roast the dal, sesame seeds and chillies in it in medium flame till the dal becomes light brown in colour. Cool it completely and transfer it to the jar of a mixer

Now grind it with the carrots into a smooth paste with minimum water. Transfer it to the serving dish

Now heat the oil reserved for tempering in a small pan, add mustard seeds and when it splutters pour it on the prepared chutney, Serve with rice, idli, dosai or even roti
