1 cup Water Add as much water as to submerge the cherries in the pan
1/4 tsp Lemon juice If you want more tanginess, add more of this

Cherry Sauce

A perfect icecream topping with a lovely bright colour

I love this season where we get to taste cherries, peaches, mangoes, apricot and many other seasonal fruits. A fruit vendor near by stocks good quality seasonal fruits and I just bought a box of these red lovely cherries. As much as I like to eat them fresh, I love to make as many recipes when these are available and this cherry sauce is a perfect topping with a rich vanilla icecream. It is very simple to make and you will love this lovely red colour which it add to your icecream

Steps

Wash the cherries and pit them. This will take some time

Transfer the cherries to a wide mouthed pan. Add water and sugar

Cook this on a medium flame and keep mashing the cherries with a masher. After 5-7 minutes, you see that the water starts evaporating and you will get a thick sauce

Now switch off the fire, add the lemon juice and mix well

Cool completely and transfer it to an air tight container. Serve with Vanilla ice cream or ice cream of your choice

I’m thoroughly enjoying cherries while I’m in Montreal as we don’t get them that easily in Kenya. I just made my cherry sauce for my desserts for next week. Love how versatile the sauce is.
