For the third day of alphabetical baking , is a savoury bake from turkey known as Cicek Pogaca which means flower shaped pogaca. According to Wikipedia, It is also called as pogacice eaten in Bosnia, Bulgaria, Slovenia, Serbia and Turkey. The outer layer can be done with filo pastry or the usual pizza bread dough and usually is served as an appetizer. These are usually filled with potato filling with loads of feta cheese stuffed in it.

Instead of feta cheese I have used paneer and spinach as the filling with chilli flakes and I have used some spice to add the zing. Both my daughter and son would have love to eat these kind of bakes, but since they are away from home, I am planning to bake them when they visit me , but for now it reached my friend’s place and she said it was good . So do try these cute flower shaped pizza

Steps

1
Done

FOR THE OUTER COVERING

Mix the flour, salt, sugar and yeast in the bowl of the stand mixer. Slowly add 3/4 cup of water and oil and run the mixer in first speed till it comes together. Now increase the speed to 1 and let it knead the dough well for another 7 minutes. Take it pout and transfer it to a well greased bowl. Cover it and place it in a warm place for it to double in volume

2
Done

Divide the dough into 4 portions. Roll out each into 3 " diameter circle

3
Done

Keep 3 tbsp of stuffing in the center. The amount of the stuffing can be changed according to your liking

4
Done

Tuck the stuffing inside by bring the outer egde together forming a ball

5
Done

Now flatten the stuffed ball a little. Roll it into 3" circle again

6
Done

Make 8 cuts from the outer edge towards the center equidistant from each other as shown

7
Done

Now slowly twist each petal clockwise as shown to form a flower. Sprinkle some black onion seeds at the center and press it lightly. Make all the four flowers in a similar way. Transfer it to a lined baking sheet and keep it covered for 20 mins for the second rise

8
Done

Preheat the oven to 200C

9
Done

Brush these flowers with milk or eggwash. Bake then for 18-20 minutes or till they start to brown. Transfer them to a cooling rack. Serve warm!!
