Who does not love pancakes???WE do too but finding an eggless one seems to be daunting task. This eggless banana apple cider pancakes are just perfect for those eggless pancake lovers.

When Mayuri suggested the theme as pancakes for the foodie bloghop, I was wondering if I could participate in it as most of the pancakes on the web seems to be with egg. Then decided to adapt this pancake into an eggless one with some changes to suit our taste buds

These pancakes are mildly sweet, and the applesauce and the banana in it makes it quite soft and fluffy.The topping is again cinnamon flavoured apples, further sweetened with the addition of honey. If maple syrup is available to you, you can substitute the honey with maple syrup.I would just stick with the honey as the price of maple syrup here in India is exorbitant.

I think the topping can be varied according to your taste. Since kk loves apple, i decided to go overboard with this fruits. Blueberry should work wonders too. Since I do not eat much of food prepared with processed flour, I just had a bite and it was full of flavour and very delicious. If you have eaten the banana appam that we prepare in tamilnadu, this pancake looks very much like a close relative of the appam. It was super delicious. Vibha are you listening to it??? 🙂

I have used the home made apple sauce. If you have store bought ones, do use that. Does not make any difference. Use ripe banana which gives a very lovely flavour.Now this sounds easy, is it not??? Just go assemble the ingredients and dish out this fluffy eggless banana apple cider pancake in a jiffy and serve them for breakfast with a generous drizzle of honey. You will simply love this.

Remove the skin of the apple, core it and cut into small cubes

Heat a pan and add the butter. Now add the cut apples and saute in low flame for 2 minutes.

Add the honey and cinnamon powder and mix well.Continue to cook on low flame for another 2 minutes. Switch off the fire and keep aside

FOR THE PANCAKES

Mash the banana well. Mix all the ingredients for the pancakes without any lumps. Add just enough water to get the pancake consistency or pouring consistency

Heat a girdle/tava or a flat pan. Divide the dough into approximately four parts. Pour one portion on the hot tava. Drizzle 1 tsp of ghee around it. Wait till it starts to bubble. Now flip it over and cook on the other side for 1 minute or till it starts to brown. Transfer this to a serving plate

SERVING

Arrange all the pancakes one above another. Top it generously with the cinnamon flavoured apples that you have cooked earlier. Drizzle the honey on it and serve warm.It is not tempting you too?Rush into the kitchen and dish it out.

Awesome pancakes Veena. I’ve made eggless ones before but have not added banana and apple sauce. I will try this recipe but will replace the Palin flour with wheat flour. It should work.

My EO will surely enjoy this pancake. Looks so delicious Veena. I need to make this for her.And I might try your eggless chocolate pancakes as well 🙂
