1 1/2 cup All pupose flour
1 cup Yogurt
3/4 cup Sugar
1/2 cup Oil I have used sunflower oil
1 1/4 tsp Baking powder
1/2 tsp Baking Soda
1 1/2 tsp Vanilla extract
A Pinch Salt
FOR THE SYRUP
3 tbsp Sugar
1/2 cup Water
3 tbsp Honey
FOR THE TOPPING
1/3 cup Mixed fruit jan
2 tbsp Dessicated coconut

Here is another popular cake from Indian bakeries especially the Bangalore Iyengar bakeries. This honey cake is a basic eggless cake, soaked in a thin syrup of honey and sugar, topped with jam and some desiccated coconut. So basically it is loaded with sugar and definitely I should stay away from this. Did I??? Definitely no…..I did eat 3 pieces and still feel guilty about it but it brought back memories of my Karnataka days. I wonder why such cakes are not available any more. These are just yumm and you should try out this simple and easy cake. You can make use of any basic vanilla cake, with eggs or without and continue with the syrup and topping to make this delicious addictive honey cake

FOR THE CAKE

Preheat the oven to 180C

Grease a 6" square cake mold

Beat curd and sugar together till creamy

Add baking powder and baking soda to this and whisk well. Leave it aside for 5 mins and it will froth up

Now add oil and vanilla extract and beat well

Mix in the flour and pour it into the prepared baking tin and bake for 40-45 minutes.

Check if it is done by inserting a wooden skewer and transfer it to a cooling rack. Remove it from the tin and let it cool completely

FOR THE SUGAR SYRUP

Boil the water and sugar till the sugar dissolves completely. Now let it cool. Once it cool downs, add the honey and mix well. Keep aside

Make some holes on the surface of the cake , so that the sugar water soaks it well.

Pour the sugar syrup completely all over the cake

Spread the jam evenly over the cake

Sprinkle the desiccated coconut all over, cut and serve

This cake stays good if it is kept in the refrigerator for 2-3 days

Every bake of your makes me drool. Our neighbour in Chennai owned an Iyengar bakery and we would get the first pick of all bakes! Looking at your bakes, I miss Chennai so much now! This one is amazing!

Honey cake looks so inviting Veena..Bhoooo..I didn’t get my share!…on the other hand, wonder why I never thought of this one, though its been on my list for a long time…I have never really tasted it myself as we don’t get eggless cakes in a local bakery, I have stood and enjoyed the lovely sight these make..:)
