My hubby loves icecream and likes jackfruit. The last time we went to an icecream joint when Vibha had come down, he tasted this jackfruit icecream and ever since that day has been raving about it. Since vibha dislikes even the smell of the fruit, I didnt try to buy jackfruit till she was around. Last week I went to the vegetable vendor and he had these ripe jackfuit pieces nicely packed and it looked very inviting. Bought packets just to eat them as fresh fruits but then while I was clearing my fridge I saw that i had some heavy cream . Then searched on the web for some recipe and to use heavy cream and then landed on the recipe at Zesty south Indian kitchen. Immediately set to prepare and I am very happy with the outcome. Thank you swathi. Having got the icecream ready I thought why not blog about it and then Facebook decided to remind me that the Icecream Food fight an event by Fantastical food fight is due today. So here is my first blogpost for this lovely event

Add the jackfruit pieces to a pan with 1 cup water and cook till it becomes soft. Cool it compleletly. Puree it |

Now in a big bowl add all the ingredients and whisk well till it becomes creamy |

Transfer it to a frozen icecream container and freeze it for 4 hrs. I froze it overnight |

Serve with fresh jackfruit pieces |

Welcome to the fight. I have never had Jackfruit. I will have to look for it next time I’m at the produce market.
I am no fan of jackfruit after it caused me severe stomach upset when I over ate as a kid… yeah it was my fault! 😀 Ever since a blogger friend shared her jackfruit icecream using the famous no-churn method, I have been wanting to try it. I did get a small fruit from back home, but HD wiped it up clean, not even allowing me to save up a few to try any new recipe. Amazing clicks as usual… would love to try this just with coconut milk, vegan style… 🙂
I LOVE LOVE LOOOOVE Jackfruit or what we call Chakka. I havent got a chance to have this year’s produce. Things I miss about India. This is such a wonderful idea and something we can think of when we have more jackfruit after having enough -:-P yes, too much causes tummy issues but who cares when we get it only during summer! 😛 ice creams are best way to beat the heat! beautiful pics and I am glad to have found your blog through this event.
