1 1/4 cup Hot Ghee
1/3 cup Warm Milk
1 Tbsp Instant yeast
1 tbsp Sugar
1/2 tsp Cinnamon Powder
2 tbsp Toasted Sesame Seeds

Kahk- Egyptian Eid Cookies

Kahk pronounced as kh-ak are Egyptian festive cookies. They are also eid cookies which are served on festivals like eid. Kahk in Arabic means cookies. These cookies are either filled with the traditional agameya which is a hoNey filling or dates and walnuts or just plain and dusted with icing sugar. This cookies are bookmarked from Amiras pantry. Since I do not have the traditonal kahk mold, I have used a fork to make the impression on the cookies

Mix the flour, cinnamon powder and sesame seeds in a bowl

Add hot ghee to this and stir well. It tends to become water. Keep it aside for 15-20 minutes for it to become thick

Meanwhile dissolve the sugar and yeast in warm milk

Crumble the flour mixture. Add the milk and knead it into a soft dough. Keep it covered for 1 hr

Pinch small balls, make them into balls, make marks on the top surface with fork and arrange them 1" apart on a parchment paper lined baking tray

Preheat the oven to 180C

Bake them for 15-17 minutes or until they start to become brwon

Transfer them to a cooling rack. Dust them with icing sugar. Serve and store the left over cookies in an airtight jar
