Makes 8 medium sized dosai
Today I have for you yet another naturally coloured dosai , manjal dosao or fresh turmeric dosai. Since ages Indian use turmeric to a large extent . Now we see that people all over have started to recognise the medicinal properties of Manjal of turmeric.
Turmeric is a natural colourant.
It has anti inflammatory properties and hence used since olden days as an applicant on inflamed areas
Turmeric when consumed regularly will increase the antioxidants in our body
Widely used in many drugs
Cosmetically this helps to shed facial hair when applied as a paste regularly.
You must be already be knowing about the culinary uses of turmeric . Turmeric latte seems to be in the lime light for some time now. Here I have used fresh turmeric in the dosai batter. Read about this dosai in a book by Chandra Padmanabhan and was very surprised to see that fresh turmeric has these uses. She says this is prepared by the tulu speaking people during diwali.Taste and flavour of fresh turmeric is an acquired taste though. It has a certain earthy feel to it. We loved it and am sure you will too

Soak the parboiled rice, urad dal, methi seeds in enough water for 3 hours |

Remove the skin of the fresh turmeric and cut into pieces |

Now add soaked rice, dal mixture, turmeric to the jar of the mixer and grind it into a smooth paste |

Add salt and grind again for 1 minute |

Transfer everything to a large bowl and keep it covered overnight |

Next day mix the batter well. It would have doubled in volume |

Heat a dosa tava on medium heat. When sufficiently hot add a ladle full of batter and prepare like regular dosai. I use coconut oil for drizzling. You can choose to use the oil of your preference |

When it starts to become golden brown, flip it on the other side. Alternatively you can cover it and cook only on one side |

Make all the dosai in the same manner and serve warm with chutney of your choice |
