Spicy Mint Quinoa ia a very healthy one pot meal with quinoa. This dish is flavoured with mint and coriander and is best served at lunch with raita
This journey from rice to quinoa has been very good. When I first started using quinoa as a replacement for rice, I feel it might be a short-lived journey. Being a pucca madrasi I thought I couldn’t manage without eating our staple rice but I have been on this for nearly 2 years now. I make every possible rice one-pot meal either with quinoa or with millets. Now we are so used to this taste and texture that we do not crave for rice any more. So continuing with one pot meal with quinoa, today it is Spicy Mint quinoa. This is for the alphabet M for the pulav series with millets that I am blogging for this month.
This month for the Food Bloggers recipe Swap challenge and Social Media, I have been paired with Shalini who blogs at F for Flavour. I loved the name of her blog and when I searched her blog for an apt recipe which would suit my diet, I saw this Mint rice for lunch box. What caught my eye was the vibrant green colour of the rice. I made a minor change of substituting the rice with quinoa and the outcome was amazing. This one-pot meal has a lovely flavour which is not overpowering. Thank you, Shalini for this lovely recipe.
The other one pot meal which I have cooked for this pulav fest is

Wash and rinse the quinoa and soak the quinoa in water for 20 minutes. Drain and pressure cook it up to 3 whistles. Let it cool and then fluff it up. |

Grind the mint, coriander and green chillies with minimum water into a smooth paste |

Heat ghee in a pan. Add the cinnamon and cloves and fry for few seconds. |

Now add the ground paste and fry till there is no more moisture. Add the necessary salt. |

Now add the cooked quinoa, mix well and serve warm |

I’m still trying to get used to eating more quinoa. I think with the spices you added, I’ll like them better. Great recipe!
The green paste has become my recent favorite base for the rice dishes. It adds vibrant color and loads of flavor to the dish. Mint quinoa dish looks inviting with the fried cashews.

Mint rice with quinoa is lovely and delicious one. Good that you have completed given up rice for two years. I am trying to avoid rice but in the end have to somehow consume it. I like variety rice with millets rather than eating them separately.
