3 Tomatoes
1 clove Garlic
1 tsp Paprika
1 tsp Ground cumin
1 tbsp Fresh coriander
2 tbsp Olive oil
1 tsp Lemon juice
to taste Salt

    Zaalouk is a very basic moroccon salad. Search the internet and you have many variations of the same and I decided to blog from mymoroccon food. I realised after cooking this salad that it is a close cousin of our Indian bhaigan bhartha. I served this with the sundried tomato whole wheat sourdough bread and it was so delicious that my family wanted more of this. I am sure to make this again

    The main ingredients that go into making of this salad is aubergine, tomato and some spices.Preparation is quite easy. Zaalouk is a very versatile dish. I served it as a topping with a sourdough bread. You can choose to serve it as a dip or as a side too.Come back for more moroccon dishes that are going to be featured on this blog this week

    Remove the skin of the aubergine. You can leave it on too. Removing the skin hastens the cooking process. Cut it into small pieces. Cut the tomatoes into small pieces too and keep it aside. Mince the garlic into small bits

    Heat the oil in a pan.Add the augergine and saute for few minutes. Next add the tomatoes and garlic and cook on low flame till it becomes mushy.

    Now add the salt, ground cumin and paprika and cook for another 5 minutes

    Switch off the fire. Add the coriander and lemon juice. Mix well and serve
