Cut the bitter gourd into two lengthwise. Remove the seeds. Cut the edges. Cut the vegetable into thin semicircular discs. Transfer it to a bowl. Add turmeric powder, Chilli powder, Tamarind paste and salt to this. Mix well. Let it marinate for 10 mins
Now you will see that there is lot of water in the bowl from the bitter gourd. This happens when it is mixed with salt. Squeeze it out and transfer to a plate. Add little more of salt. Add the coconut oil. Mix well
Meanwhile preheat the air fryer at 180C for 3 minutes
Arrange the prepared bitter gourd in the basket of the air fryer
Air fry for 5 minutes for a softer bitter gourd stir fry.
Continue to another 3 minutes if you need crispy one
