Bitter gourd fry in air fryer

Bitter gourd fry cooked in an air fryer uses minimum or no oil and is very crispy with the unique combination of the sweet coconut.

  • Air Fryer


  • 2 Bitter gourd
  • 1/4 Cup Coconut
  • 1/4 Tsp Turmeric powder
  • 1 Tsp Chilli powder
  • 1 Tsp Coconut oil
  • 1 Tsp Tamarind paste
  • 1/4 Tsp Asafoetida
  • To Taste Salt


  • Cut the bitter gourd into two lengthwise. Remove the seeds. Cut the edges. Cut the vegetable into thin semicircular discs. Transfer it to a bowl. Add turmeric powder, Chilli powder, Tamarind paste and salt to this. Mix well. Let it marinate for 10 mins
  • Now you will see that there is lot of water in the bowl from the bitter gourd. This happens when it is mixed with salt. Squeeze it out and transfer to a plate. Add little more of salt. Add the coconut oil. Mix well
  • Meanwhile preheat the air fryer at 180C for 3 minutes
  • Arrange the prepared bitter gourd in the basket of the air fryer
  • Air fry for 5 minutes for a softer bitter gourd stir fry.
  • Continue to another 3 minutes if you need crispy one
  • Add the coconut, mix well and serve
