Dry roast the cowpeas and boil in enough water till soft. Drain and keep aside
Add jaggery to 1 1/4 cup of water and boil till the jaggery dissolves. Strain it for impurities and keep aside
Add this syrup to a pan and boil
Add cardamom, fresh coconut, cowpeas to the jaggery syrup and boil for 2 minutes
Now add the rice flour and continue to cook on low flame stirring continuously till everything comes together. Switch off the flame
Transfer it to a plate and let it cool completely.
Pinch small balls from the dough
Keep the steamer with water on the stove and heat
Grease the steamer plates or idli plates
Grease your palm with ghee
Take a ball that you have pinched from the dough. Flatten it on the palm. Make a depression at the center and place it on the greased plate. Make all the adais a similar way
Steam them for 10 minutes
Offer it as a prasadam along with butter as told in the introduction
