Clean and wash the millets. Keep aside
Dice the vegetables and keep aside
Put the instapot/Nutripot on the SAUTE MODE
Add ghee to the inner pot of the nutripot/instapot
when the ghee gets heated up add the cumin seeds and let it sizzle
Now add the green cardamom, cloves, cinnamon, bay leaves in the order
Now add the green chillies and onion and continue to cook on saute mode for few seconds
Now add the ginger garlic paste and saute
Now add the diced bell pepper, carrots, cauliflower and peas. Mix well
Now add the washed kodo millet and mix well
Add 1 cup of thick coconut milk
Add 1/2 cup of water. Mix well
Add mint leaves and salt. Mix well. CANCEL THE SAUTE MODE
Close the lid of the nutripot. Keep the vent in the seal position. Cook on manual for 5 minutes. Let the pressure release naturally
Once the pressure has released, open the lid carefully and fluff it up. Transfer the brinji to a serving bowl and serve warm
