Quick Kodo millet brinji in wonderchef Nutripot

Quick kodo millet brinji is a millet base one pot meal with vegetables, cooked in coconut milk and is mildly flavoured with bay leaves served with appalam

  • 1 cup kodo millet/varagu
  • 1 tsp cumin seeds
  • 2 tsp Ghee
  • 2 Green cardamom
  • 2 Cloves
  • 1" cinnamon
  • 4 Bay Leaves
  • 2 Green Chillies
  • 1 Onion
  • 1/2 cup green bell pepper
  • 1/4 cup carrot
  • 1/4 Cup green peas
  • 1/4 Cup Cauliflower florets
  • 1 Cup Thick coconut Milk
  • 1/2 Cup Water
  • 1/4 Cup Mint leaves


  • Clean and wash the millets. Keep aside
  • Dice the vegetables and keep aside
  • Put the instapot/Nutripot on the SAUTE MODE
  • Add ghee to the inner pot of the nutripot/instapot
  • when the ghee gets heated up add the cumin seeds and let it sizzle
  • Now add the green cardamom, cloves, cinnamon, bay leaves in the order
  • Now add the green chillies and onion and continue to cook on saute mode for few seconds
  • Now add the ginger garlic paste and saute
  • Now add the diced bell pepper, carrots, cauliflower and peas. Mix well
  • Now add the washed kodo millet and mix well
  • Add 1 cup of thick coconut milk
  • Add 1/2 cup of water. Mix well
  • Add mint leaves and salt. Mix well. CANCEL THE SAUTE MODE
  • Close the lid of the nutripot. Keep the vent in the seal position. Cook on manual for 5 minutes. Let the pressure release naturally
  • Once the pressure has released, open the lid carefully and fluff it up. Transfer the brinji to a serving bowl and serve warm


  • You can substitute kodo millet with any other millet or quinoa
  • You can choose to make it as a traditional brinji with rice too
  • Addition of vegetables is completely your choice
  • You can make the same recipe in a pressure cooker on stove top too
