Ingredients
  

  • 1 cup Jowar flour heaped
  • 1/3 cup Carrot(grated)
  • 1/3 Cup Cucumber ( grated)
  • 2 Green chilles Chopped finely
  • 2 Tbsp Fresh Coriander Cut finely
  • 1 Tbsp Fresh Mint leaves Cut finely
  • 1/2 Tsp Salt Modify the quantity according to your taste
  • 2 Tbsp Cooking oil
  • As required Warm water For kneading the dough

Instructions
 

  • Grate the carrot and cucumber. Cut the chillies finely. Cut
    the coriander and mint leaves also finely and keep aside.
  • Mix the flour and salt in a bowl
  • Now add the grated vegetables and greens to the flour
    mixture and mix well. It will look like bread crumbs
  • Now add lukewarm water little by little and knead it into
    soft dough which can be rolled easily
  • Take a parchment paper/plastic sheet/ banana leaf. Grease it
    well. Heat a dosa girdle in medium heat
  • Pinch a big lemon size of the dough. Wet your fingers with water and pat it into a thin disc as thin as possible. Make a small hole in the center which will help in cooking the roti faster
  • Now put the roti along with the parchment paper on the hot
    tawa, the parchment paper being on the top and cook for 30 seconds on low flame
  • After cooking for 30 seconds, you can peel off the parchment paper which comes out easily. Now cook it in medium flame till it starts to brown. Add few drops of oil all around and in the center and cook
  • Now flip it over and cook on the other side till it starts to brown. Likewise make all the rotis
  • Serve warm with pickle, chutney pudi and curd

Notes

  • You can add bottle gourd instead of cucumber
  • Onions chopped finely can be added to the dough
  • Palak cut finely or pureeed can also be added to knead the dough
