Spicy Mint Quinoa

Spicy Mint Quinoa ia a very healthy one pot meal with quinoa. This dish is flavoured with mint and coriander and is best served at lunch with raita

Ingredients
  

  • 1/3 Cup Quinoa
  • 2/3 Cup Water
  • 1/4 Cup Mint
  • 2 tbsp Coriander
  • 1 Green chilly
  • 1 Onion
  • 1 Clove
  • 1/2 Inch Cinnamon
  • 1 tbsp Ghee
  • To Taste Salt

Instructions
 

  • Wash and rinse the quinoa and soak the quinoa in water for 20 minutes. Drain and pressure cook it up to 3 whistles. Let it cool and then fluff it up.
  • Grind the mint, coriander and green chillies with minimum water into a smooth paste
  • Heat ghee in a pan. Add the cinnamon and cloves and fry for few seconds.
  • Now add the ground paste and fry till there is no more moisture. Add the necessary salt.
  • Now add the cooked quinoa, mix well and serve warm
