Preheat the air fryer to 200C for 5 minutes
Wash and dry the brinjals well. Next cut the brinjal lengthwise into four.
Apply oil on all of the surfaces of the brinjal.
Now arrange the oiled brinjal pieces in the basket of the air fryer
Air fry it for 10 minutes.
Check it after 10 minutes. If not browned fully, air fry it for another 6-8 minutes
Carefully take it out with tongs and let it cool completely.
Now remove the skin. This comes out very easily. If you find it difficult, scoop out the flesh with a spoon.
Mash the pulp well and keep aside
Now heat oil in a pan.
Once it is sufficiently hot, ass mustard seeds, and black gram dal. Once the mustard starts to splutter add the cut green chillies, curry leaves and asafoetida and saute for a minute.
Now add the mashed brinjal and mix well. Cook on low flame for 1 minute.
Now add the milk and mix well and continue to cook in low flame for another 2 minutes.
Add salt, mix well and cook for another 2 minutes.
Switch off the fire and serve hot with rice and rasam.
