Sutta kathrika masiyal in air fryer is an easy way to roast brinjals quickly. This roasted brinjal can be used to make masiyal, bhaingan bharta and gothsu.

Equipment

Ingredients
  

  • 2 Brinjal Large variety
  • 1 Tbsp Oil
  • 1 tsp Mustard seeds
  • 1 tsp Black gram dal/urad dal
  • 2 Green chillies
  • 1/4 tsp Asafoetida
  • Few Curry leaves
  • 2 tbsp Milk
  • To Taste Salt

Instructions
 

  • Preheat the air fryer to 200C for 5 minutes
  • Wash and dry the brinjals well. Next cut the brinjal lengthwise into four.
  • Apply oil on all of the surfaces of the brinjal.
  • Now arrange the oiled brinjal pieces in the basket of the air fryer
  • Air fry it for 10 minutes.
  • Check it after 10 minutes. If not browned fully, air fry it for another 6-8 minutes
  • Carefully take it out with tongs and let it cool completely.
  • Now remove the skin. This comes out very easily. If you find it difficult, scoop out the flesh with a spoon.
  • Mash the pulp well and keep aside
  • Now heat oil in a pan.
  • Once it is sufficiently hot, ass mustard seeds, and black gram dal. Once the mustard starts to splutter add the cut green chillies, curry leaves and asafoetida and saute for a minute.
  • Now add the mashed brinjal and mix well. Cook on low flame for 1 minute.
  • Now add the milk and mix well and continue to cook in low flame for another 2 minutes.
  • Add salt, mix well and cook for another 2 minutes.
  • Switch off the fire and serve hot with rice and rasam.
