Grate the mango. I use the food processor to grate as it saves me a lot of time.
Put the instant pot on the saute mode
Add mustard seeds.
Once the mustard seeds start to splutter, add the grated mango.
Now cancel the saute mode
Add the turmeric powder, chilli powder and salt
Close the lid of the instant pot. Keep the vent in the SEALING position and pressure cook it for 3 minutes.
Once it is pressure-cooked, let the pressure release normally. Open the instant pot when all the pressure has released.
Mix well and put it on saute mode for 3 minutes and mix well. Add the fenugreek powder, mix well. Check if there is still some moisture left. If yes then continue to saute for another 2 minutes
Switch off the instant pot
Store it in the refrigerator after it cools down completely in an airtight bottle.
