Roast coriander seeds, cumin seeds, fenugreek seeds, pepper corns and red chillies in ghee till a good flavour comes out. Take it out and keep it aside.
In the same pan add the garlic and roast well. Add it to the roasted masala spices
Transfer all this to the jar of a mixer, Add tamarind and salt and grind into a smooth paste with little water,
FOR THE MARINADE
Cut the paneer into small pieces.
Add the panner, masala paste, turmeric powder and curd to a bowl. Mix well and keep aside for 15 minutes
FOR THE PANEER GHEE ROAST
Cut the onion finely
Switch on the instant po in the SAUTE MODE
Once hot add the ghee
Now add the onions and saute for 2 seconds
Add the curry leaves and salt
CANCEL THE SAUTE MODE
Keep a trivet inside
Place the bowl with the marinated paneer on this
Close the lid of the instant pot. Keep the event in the sealing position
