Chimichurri Quinoa Salad

Ingredients
  

  • 1/4 Cup Quinoa
  • 1/2 Cup Water
  • 1 Tbsp Parsley
  • 1 Onion
  • 10 Cherry tomatoes
  • 1 Green chilly
  • 1 Avocado
  • 1 Tbsp Lemon Juice
  • 1 Tbsp Olive oil
  • To Taste Salt

Instructions
 

  • Cook quinoa until soft. I pressure cooked it for 3 whistles.
  • Chop all the vegetables finely
  • Mix all the ingredients of the salad and serve
