Chimichurri Quinoa Salad
Veena
- 1/4 Cup Quinoa
- 1/2 Cup Water
- 1 Tbsp Parsley
- 1 Onion
- 10 Cherry tomatoes
- 1 Green chilly
- 1 Avocado
- 1 Tbsp Lemon Juice
- 1 Tbsp Olive oil
- To Taste Salt
Cook quinoa until soft. I pressure cooked it for 3 whistles.
Chop all the vegetables finely
Mix all the ingredients of the salad and serve
