Smoked eggplant and quinoa with yogurt

Ingredients
  

  • 1 Eggplant Big
  • 1/4 Cup Quinoa
  • 1/2 Cup Yogurt
  • 2 Green chillies
  • Few Curry leaves
  • 1 Tbsp Coriander
  • 1 tsp Oil
  • To Taste Salt

Instructions
 

  • Apply oil to the surface of the eggplant. And roast it on open flame till the skin chars. Let it cool completely. Peel the skin and mash the eggplant well. Keep aside
  • Cook the quinoa in 1/2 cup till well cooked. Let it cool completely
  • Cut the chillies finely
  • Now mix everything together and serve chilled
