FRESH GREEN PEA MINT SOUP

Equipment

  • 1 Pressure cooker
  • 1 Blender

Ingredients
  

  • 1 Cup Fresh green peas
  • 1 Red onion
  • 6 Stalks Spring onions
  • 2 Cloves Garlic
  • 1 Bay leaf
  • 1/4 Cup Mint leaves
  • 2 tsp Olive oil
  • 1 Tbsp Fresh cream
  • To Taste Salt
  • To Taste Pepper powder

Instructions
 

  • Shell the green peas. Slice the onions, spring onions, garlic. Clean and wash the mint leaves.
  • Heat the pressure pan. Add olive oil and once that heat up add the bay leaf.
  • Now add the red onions, the bulb of spring onions and garlic and saute for a minute.
  • Now add the stalk of spring onions and saute for a minute.
  • Add the green peas and saute for a minute or two.
  • Now add the mint leaves, mix everything well. Add enough water and close the lid of the pressure pan and cook up to 2 whistles. Let the pressure release naturally and let it cool.
  • Remove the bay leaf.
  • Now transfer this to the blender jar and blend it into a smooth puree.
  • Transfer it back to the pressure pan, add salt and mix well.
  • Add more water to get the required consistency and heat it for a minute or two.
  • Transfer it back to the serving bowl, top it with fresh cream and pepper powder and serve warm..

Notes

  1. Adjust the quantity of water, to suit the thickness of the soup that you like.
  2. To make it vegan, substitute the fresh cream with coconut cream.
