Inji Thogayal

The third of the roots that we will be using is this
humble ginger. In our cuisine we use it in many recipes to enhance the flavour or
for its medicinal properties. One such is this Inji Thogayal which helps in
digestion. It is perfect when paired with curd rice but can be had with dosai
too.
INGREDIENTS

PREPARATION
Remove the skin from the ginger and cut into very
small bits

Heat oil in a pan and add the dal and red chillies
and saute till the dal turns to light brown. Transfer it to a plate and let it
cool down

In the same pan add the cut ginger and saute in low
flame for 1 minute

Transfer this ginger, dal mixture, tamarind, jiggery
and salt to a mixer jar and grind it with enough water to a smooth paste.
