Masala Bread

Starting December and all through , you will be seeing Baked goodies on my page.Yes!!I love baked goodies but needed a push to do this marathon and Champa Of Versatile Vegetarian Kitchen announced this one month long Baking event”Bake-A-Thon“. Champa is a truly versatile blogger. Go over to her page and you can see awesome recipes. Many of the bread which I bake are from her space. When she announced this event, i immediately sent her my request and she accepted it.Thank you Champa!!
To start with I shall start with Masala Bread…..This bread is adapted from Suma blog Cakes and More who in turn has adapted from Champa herself:-)
INGREDIENTS
Active Dry Yeast 2 1/4 tsp
All purpose flour 3 1/4 cup
Warm Water 3/4 cup
Sugar 2 tbsp
Salt 1 1/2 tsp
Oil 2 tbsp
FOR THE MASALA
Onion 3/4 cup(finely chopped)
Cumin seeds 1 tsp
Mint Leaves 3-4 tbsp(finely chopped)
Green chillies 2(optional)
Oil 1 tsp
PREPARATION
FOR THE MASALA
Cut the onions, chillies and mint finely
Heat a pan with 1 tsp oil and add the cumin seeds. When it sizzles ,add the onions and saute till it becomes transparent. Now add the chopped mint, saute for a minute and switch off the fire and keep it aside
In a large bowl add the warm water, sugar and yeast. Let it rest for the yeast to prove.It took around 10 minutes for my yeast to rise and become frothy!!
To this add the salt and oil and mix well.
Slowly add the 3CUPS OF FLOUR AND MASALA AND THEN THE REMAINING 1/4 CUP AS THE ONIONS MIGHT LEAVE OUT WATER and knead it into a soft pliable dough.Takes around 10 minutes to get the softness.
Coat with oil and keep it covered in a warm place for it to double….1hr-11/2 hrs
After this 1st rise, punch the dough down a little and shape it into a loaf. Grease a bread mould with oil and place this shaped dough in it. Loosely cover with a aluminum foil(as suggested by suma) and keep it for the 2nd rise in a warm place.Takes around 45 mins-1 hr
Towards the end of the 1 hr preheat the oven to 190C. When the oven is ready, place this pan in the middle Rack and bake for 20 minutes.
Then lower the temperature to 160C and bake for another 15-20 minutes till the crust is nice brown
Take it out of the oven, brush with butter and let it cool on a wire rack
Cut into slices when completely cooled
Wow!!!!This is so good…..This recipe is definitely a keeper.
NOTE: SUMA SAYS THAT that”Champa advises to take the loaf out of the tin within 10 minutes of baking the bread and cool it on a wire rack. If baking in an OTG, lower the temperature by 25 F and bake for 5- 8 minutes longer”.
