Paneer Tuttifrutti Cake

Good morning!!!
For day 2 of Bake-a-thon , I wanted to bake a cake which was different from the usual ones.When browsing came across this paneer cake from Saffron Trail.Loved the very look of it and since I had paneer in my fridge(I always do:-) )Went for it and the cake was ready in an hour. Wow!!!This looks so good Right?????
INGREDIENTS
Whole Wheat flour/ Aata 1 1/2 cup
Paneer 1/2 cup
Whey water 3/4 cup
Sugar ground with 3 seeds of cardamom 1 cup
Baking powder 1 tsp
Baking soda 1/2 tsp
Oil 2 tbsp
Condensed milk 4 tbsp
Vinegar 1 tbsp
Tutti frutti 1/4 cup
Milk 1/4 cup( only if require)
PREPARATION
Preheat the oven to 180C
Grease a 6″ round pan/ loaf tin with butter.
Make paneer as shown here or Boil 1/2 lt milk, add 1 tbsp of vinegar to this boiling milk, mix well and you see that the milk splits. Now strain and keep the whey water aside
Sift the flour with baking powder and baking soda.Keep it aside.
Mash the paneer, oil and condensed milk in a a large bowl.
Now add the vinegar and continue mashing and add the powdered sugar to this and mix well.
Fold in the flour mixture alternatively with the whey water in batches to get the cake batter consistency.If the whey water is not enough then use the milk.
Sprinkle some flour on the tuttifrutti, mix well and fold in this into the batter and mix well. Reserve some for topping
Pour into the prepared tin and bake at 180C for 30 minutes and reduce the temperature to 160C and bake for further 15-20minutes or till done.
To check , insert a wooden skewer and see if it comes out clean

What a brilliant idea to use the whey from making paneer; it's the only true whey that is vegetarian.
It's a lovely treat, Veena. How much tuttifrutti did you use, and is it like the candied fruits and peels used in traditional English fruitcakes?
It does look very good. I might use ricotta and adapt this.
