Zucchini Bread for SRC

A few months back I had filled up the form at SECRET RECIPE CLUB to become a member.I waited for sometime to know if my membership was accepted and then forgot about it. One fine day i see a mail from April asking me if I am still interested in joining. I said a big yes and the both April and jane have been regularly sending us the information as to how to go about it and I love this group:-).
For the month of February have been assigned Nancy’s Blog “THE BUSY MOM“.The first thing that struck to me about her blog wa her style of blogging..simple and appealing. I was surprised to see some Indian dishes on her blog….have bookmarked her Saag Paneer as well. Finally chose to bake a bread again!!
INGREDIENTS

All-purpose flour 3 1/4 Cups
Salt 1 1/2 tsp
Nutmeg powder 1 tsp
Baking soda 2 tsp
Cinnamon powder 1tsp
Sugar 3 cups
Vegetable oil 1 cup
Eggs 4
Water 1/3 cup
Zucchini 2 cups
Lemon juice 1tsp
PREPARATION
Preheat the oven to 180C
In a bowl combine flour, salt, nutmeg powder, baking soda, cinnamon powder and sugar
In another bowl combine oil, eggs, lemon juice and zucchini
Mix wet ingredients to the dry ingredients
Transfer this batter into two well oiled loaf tins
Bake for 50 -55 minutes or until done
Serve warm!!
