Kothu Parotta

For the final day of blogging for street food, I decide to cook our own madrasi street food..kothu parotta. I am always in awe of those road side shops where the guy behind the huge kadai on the stove shoves in the cut parotta pieces into the masala and with a flat plate in each hand mixes it in a nice rhythmic manner…
INGREDIENTS
Parotta 4
Onion 2
Green capsicum 1
Tomato 2
Green chillies 2
Ginger garlic paste 1tsp
Coriander powder 1tsp
Cumin powder 1tsp
Chilli powder 1tsp
Turmeric powder 1/4 tsp
Coriander 1 tbsp
Oil 1tbsp
Salt to taste
PREPARATION
Slice the onions, cut the capsicum and tomato into small pieces
Heat oil in a pan.Add cumin seeds and when they sizzle, add the onions and cook on a very low flame. When they become transparent, add the ginger garlic paste and cook for 1 minute
Now add the cut vegetable and continue to cook for 5 minutes.
Now add all the dry masala and salt.
Sprinkle little water, mix well and continue to cook till the whole thing becomes mushy
Now add the cut parotta pieces, mix well and cook for 1 minute
Garnish with coriander and serve hot!!!

I want that whole plate, who can resist to that fantastic,flavourful kothu parotta.
we do something with the left over rotis at home, but never expected it to be this exotic and also as a street food, next time around in chennai i will definitely look out for this

i can remember the cling clang noise the laddles make on the pan while doing this in the street shops!!! Looks tempting!!! 🙂

there is a version of this also as street food in Sri Lanka. I saw it on an episode of Anthony Boudain's No Reservations…and I had it at a Sri Lankan restaurant here in NY – looks so good – wish I had some for lunch right now
