Aval Payasam

Another edition of Blog hop wednesday by Radhika. This week I am paired with Hyma of Hyma’s Flavours. She has an awesome collection of recipes and i was confused as o which i should choose. Finally I settled for aval payasam as Today is my Dad’s Birthday :-). Though he left us 25 back…..His memories are still afresh and will remain so for the days to come and this payasam is to celebrate his birthday!!!!

INGREDIENTS
Thick Aval/ Poha 1/2 cup
Milk 3 cups
Sugar 1/4 cup
Cashew few
Raisins few
Saffron few strands
PREPARATION
Pulse the Beaten rice flakes in a mixer into a rawa like consistency
Heat a pan . Add 1 tbsp of ghee. Add cashew and raisins and fry till the cashew turns brown and the raisins swell, take it out and keep it aside.
In the same pan add the ghee and saute it for a minute. Now add the milk with the saffron and let it simmer till it becomes thick(nearly 15 minutes in low heat)
Now add the sugar and mix well. Cook for 5 minutes.
Switch off the heat and add the fried cashew and raisins
Serve warm or cold
