Eggless onion pepper quiche

Challenges do indeed push you a little more than what you think U CAN!!! After joining SWEET PUNCH i have definitely tried to come out of the comfort zone of cooking just south Indian dishes:-).This month’s sweet punch challenge was to bake a savoury !!!!YEAH yeah !!! I can hear many of you saying “good”:-)Well! RIA asked us to bake a Golden onion quiche.
i made minor changes in the recipe because i wasn’t comfortable with eggs in the filling , so decided to make the filling without eggs. I substituted silken tofu for eggs. Having made this i thought i could as well bake the pastry without eggs too.
INGREDIENTS
For the pastry:
Maida 200g
Butter(frozen) 100g
Baking powder 1/4 tsp
Salt to taste
Ice cold water as required
PREPARATION
Sieve in the maida, baking powder and salt together.
Grate the frozen butter in it and gather the flour till it resembles coarse sand.
Mix the flour with a little ice cold water. The dough should resemble chapathi dough
Roll it out on a lightly floured surface and lift it up carefully and line the tart mould that you will be baking it in.If it breaks up and you need to do a patch work
Make sure the dough comes a little way up the sides, so that it can hold the filling in. prick the base with the fork and let it rest in the refregerator till the filling is ready
FILLING
Onion 1 sliced
Green, Red,Yellow pepper 1 each cut into slices
Silken tofu 1/2 cup( substitute for 2 eggs)
Cheese 1/4 cup
Milk 1/2 cup
salt to taste
pepper 1 tsp
Whisk the tofu, milk and cheese in processor. Add pepper powder and salt to it.
Heat 2 tsp of oil in a pan and saute the onions till golden brown. Add the peppers to it and saute for 5 more minutes.cool for a few minutes
Take out the prepared pastry shell and layer the onion pepper mixture in it. Now add the tofu milk mixture and bake this at 190 C for 25 minutes or till done
Yummy egg less quiche ready.
We can add as many vegetables as we want. Cheese could be increased if your child demands:-)
Pretty fast to prepare and bake

oh yeah it tastes great even minus the eggs..:)..love your twist of adding the bell peppers and tofu..colourful, yummy and healthy! 🙂

Looks great Veena. My next trip to Mumbai I will be shopping for Silken Tofu and then make this. Thanks for the eggless variation. I too prefer eggless. 🙂
