Jigarthanda

Madurai is famous for this drink Jigarthanda. Now we
see many juice shops offering us Jil Jil Jigarthanda even in Chennai. I had
bookmarked this recipe from Gayatri and got to opportunity to make it and blog
about it for the alphabet J.
INGREDIENTS
Adapted from Gayathri Cookspot
Vanilla
Icecream
Sweetened
milk
Nannari
syrup
Almond
Pisin
Sweetened
Palkhova
PREPARATION
PREPARATION OF BADAM PISIN
Soak 3-4 granules of badam pisin in lots of water
overnight. By morning you will see the bowl full of white jelly. Store it in
the refrigerator in an air tight box
SWEETENED MILK
Boil 1lt of milk till it reduces to 500 ml. Let it
cool completely
Now add 4 tbsp of palkhoa and mix well. Let it chill
in the refrigerator.
ASSEMBLY
Take the glass in which you want to serve the drink
Transfer 2-3 tbsp of the soaked almond pisin to this
Top it with 1 tbsp of Nannari syrup
Now add the required amount of sweetened milk
Top it with a scoop of vanilla icecream and serve
