For this month of Pot luck party I have been paired with Manjula who blogs at Desi Fiesta. She is a versatile blogger having recipes from across the continents:-) and she brought this delicious Sambhar to the party and I have tried to recreate it with a very small change of not using shallots. So here is the recipe for a simple delicious sambhar!

Toor dal 1/2 cup
Kovakkai (Tindora/Ivy gourd) 1/4 kg
Turmeric powder 1/4 tsp
Dhania powder 2 tsp
Sambhar powder 2 tsp
Tamarind a small marble sized
Green chiili 1
Curry leaves few
Salt to taste
I have started cooking the sambhar in a very untraditional way since the day I saw this pressure cooking in a fb group called United by food.So here is my pressure cooked sambhar
Soak the toor dhal in warm water for 15-20 minutes
Microwave the tamarind in 1/2 cup of water for 1 minute. Let it cool. Squeeze the extract and keep it aside
Slice the kovakkai into 4 pieces lengthwise and tomato into small pieces
Heat the oil in a small pressure pan. Add the mustard to it and when it splutters add the cut kovakkai and green chillies. Saute for 1 minute.
Now add the tomato, mix well and pour the tamarind extract into it.
Now put the sambhar powder, dhania powder, salt, soaked dal ,curry leaves and mix well, close the lid, put the weight on and pressure cook it till 3-4 whistles. Let it cool
Open the lid, mix once and serve it with some hot rice and a curry!!
