Mixed Vegetable Masala Rice

HI
Not all weekends do I cook elaborate, some weekends
it is a very simple one pot dish especially when my daughter gives me a break
from the kitchen to cook it herself.
INGREDIENTS
Brown
Basmati rice

Cumin

Turmeric

Garam
Masala
1tsp
Cumin
1/4tsp
Fennel
1/2tsp
Cardamom
2
Cloves
2
Bay
leaf
1
Cinnamon
1/2”
inch
Ghee
1tbsp
Lemon
juice
1tbsp
Salt
to
taste
PREPARATION
Wash and drain the rice and keep aside
Slice all the vegetables
Heat a pressure pan and add the ghee to it. Once sufficiently
hot add the cardamom, clove, cinnamon,bay leaf, cumin and fennel seeds and
saute for few seconds
Now add onions and green chillies and saute till it
becomes transparent
Add all the vegetables, and ginger garlic paste and
saute for few more seconds
Now add the turmeric, chilli,coriander,cumin powders
and mix well
Add the washed rice, water, garam masala,lemon juice
ans salt
Mix well and put the lid on. When the steam starts
to come out, put the weight on thelid of the cooker and cook upto 3 whistles
Let it cool and then open the lid and fluff it up
with a fork
Serve with raita and pappad!!
