Pani popo -Eggfree

Few people say that Pani popo is a Hawaiian sweet bread baked in a pool of coconut milk and some others proclaim that it is a samoan bread.I had bookmarked this long back from Roxanna’s blog and this suited perfectly for the international theme of BM#32. So here is the simple recipe for this delicious bread.

INGREDIENTS
Original Recipe is Here
FOR THE DOUGH
All purpose flour                      3 cups
Active dry yeast                       1 1/2 tsp
Warm water                              1/4 cup
Sugar                                        1/2 tsp
Salt                                           1/2 tsp
Olive oil                                    1Tbsp
Coconut milk                            200ml(I bought store bought Dabur brand)
FOR THE TOPPING
Coconut Milk                            200 ml
Sugar                                        1/3 cup

PREPARATION
Mix the yeast, 1/2 tsp sugar in 1/4th cup of luke warm water. Let it rest for 10 minutes till it froths up.
In the bowl of the food processor mix the flour and salt.
Next pour in the oil and pulse the processor for 1 minute
Now add the frothed yeast mixture and run the processor for another minute
Slowly pour the coconut milk while running the processor and we see that everything will come together with 3-4 minutes
Now transfer this to a well oiled bowl, knead for 2 more minutes, smear the dough with oil and cover it. Let it rest for 1 hr or till it doubles in volume
Pinch small balls and arrange in a greased circular mould(I used a 9″ pan), one ball in the center and all others around it leaving some space between them. As they rise they will stick together
Cover it and let it rest again till it doubles. Should take 1/2 hour or so

PREHEAT THE OVEN TO 190C
Now mix the coconut milk and sugar for topping and pour all over the buns

Sprinkle some more sugar on the buns too
Bake these for 40 minutes. You will see that the top has browned and the liquid has been used .
Let it cool

Invert this on a plate and you will see the some gooey coconut milk at the bottom
Cut and serve Warm or cold

I must say that these were super soft, delcious and with the right amount of sweetness with the coconut flavour!!!
