Peanut Rice

 For the second day of the series of rice dishes it
this variety of mixed rice. Very easy to prepare when you have unexpected
guests for lunch or dinner. This is flavourful rice and am sure everyone will
love it.

INGREDIENTS
Ponni
raw rice

cup
Roasted
Peanuts
1/3
cups
White
sesame seds
2
tbsp
Red
chillies
4
Dessicated
coconut
1/4
cup
Oil
 1tbsp
Mustard
1
tsp
Asafoetida
1/4
tsp
Curry
leaves
Few
Salt
 To taste
PREPARATION
Cook rice in 2 cups of water in a pressure cooker.
Once the pressure has realised fully, transfer it to a big plate. Fluff it up. Let
it cool completely
In a pan dry roast the peanuts, sesame seeds and the
dessicated coconut for a few seconds.
Heat 1 tsp oil and roast the chillies
Now transfer everything to a mixer jar, add salt and
grind it to a smooth powder in pulses , else the peanut will turn into a paste.
Now add this to the rice, mix well. Taste for salt
and adjust accordingly
Serve with fried appalam/paapad  or a curry of your choice.

I served it with Stuffed brinjal cooked in a
microwave.
