With diwali celebration everywhere, I decided to make Mundiri murukku. Since we are not celebrating this year I had decided not to cook anything special but when Diwali was the chosen theme for foodie monday bloghop, I thought one savoury dish for my blog will be ok. So here is my mundiri murukku recipe
You must have seen many murukku recipes and many recipes of mundiri murukku too. I am yet to blog about badam muruku, thenga murukku. Well the list is endless. For the basic mullu murukku you can refer to this link.
Many of us receive boxes of dry fruits as gifts during this season. We get too and we make sure we distribute it to people who cannot afford but one or two boxes do find their way into my kitchen and then these snacks are dished out.Adding mundiri to a murukku recipe, add that crunchiness and taste. By adding this we elimate the use of urad dal. The preparation is quite easy too and is not very time consuming like other diwali bakhsanams.
This mundiri murukku is the melt in the mouth type of murukku. When you bite it, feels crispy and once in the mouth it just melts away. The cashews and the butter make all this magic. The fact that it takes only 1 hr to prepare this makes it all the more tempting. No huffing and puffing to soak the rice, go the flour mill to get it ground. Here I have used the processed rice flour that is available off the shelf in the super markets, Soaked the cashw for 1/2 hr and ground . Mixed it to make this very delciious savouries.
The added cashew, butter and the fact that it is deep fried may keep the health freaks away but Diwali comes once a year….celebrate it in all its grandeur. If you do not want to eat too much of these, you can always make them and gift the underprivileged once. Make a difference to them this season

Soak the cashew in enough water for 30 minutes |

In a big plate sieve the rice flour.Add salt and asafoetida to this. |

Now drain the water from the cashew and grind it into a smooth paste. Add this to the flour and mix well |

Add the softened butter to this and mix well. Add just enough water to knead the flour mixture into a smooth dough |

Heat oil in a pan on a medium flame |

Fill the murukku or chakli press with a ball of dough and press it on the hot oil. Let it cook for few seconds. Now turn over and cook on the other side till it is golden brown in colour |

Take it out with a slotted spoon and let it drain on an absorbant paper |

When you have used up all of the dough, let the murukku cool completely and then transfer it to an air tight container . |

Eat some and enjoy the delicacy you have prepared and share it with others too. |
