A different dish with lot of veggies
















When we hear the word Ratatouille, the first thing that comes to the mind is the classic movie by this name. Like most of us, I have been wanting to cook this dish since the day I saw this movie but I always thought that it involved ingredients that I could not source or the procedure of cooking up this classic dish might be extremely difficult but was pleasantly surprised to see that it was easy.

The vegetables that I have used here are eggplant, onion, zucchini, bell pepper which are easily available. For the sauce it is a combination of tomato paste, olive oil, pepper powder, salt , paprika and some thyme. Some recipes use potato and squash as well. All these vegetables have to sliced into discs and stacked and cooked. So it is advisable to cut the vegetables into discs in approximately the same size which helps in stacking properly and the visual presentation of the final dish looks good .
This is a vegetable casserole which colourful veggies stacked in a rich tomato sauce flavoured with garlic and herbs. You can also cook this chunky stew on gas top. This aromatic ratatouille is served warm with warm bread.

Preheat the oven to 180C |

Cut the vegetables into thin even sized discs |

Smear the olive oil evenly to the base of the baking dish. Add the tomato sauce, salt, paprika powder, pepper powder, thyme , basil to this and mix evenly |

Now arrange all the vegetables on this sauce. |

Drizzle some tomato sauce and bechamel sauce on the top of the vegetables. Sprinkle some salt as well |

Cover the baking dish with parchment paper and bake for 50-60 mins. You will see the sauce boiling and aroma filling your room. Switch off the oven and let it cool a little |

Serve warm with a bread of your choice |
