2 cups Cherry tomatoes(halved)
15 Green beans
1/2 cup Canned chickpeas
1 Onion sliced thinly
15 Olives
few sprigs Thyme
FOR THE DRESSING
2 tbsp Olive oil
1 tbsp Honey
2 tsp Mustard sauce
1 tsp Pepper powder
1 tbsp Lemon juice
1/2 tsp Salt

Vegan Nicoise Salad

Salade Nicoise is a salad that originated in the French city of Nice. It is traditionally made of tomatoes, hard-boiled eggs, Nicoise olives, and anchovies. Later many variations were brought in by leading chefs including Julia child and Nicoise salad saw the new avatars by adding beans, peppers and seasonal vegetable. I came across this recipe of the vegan Nicoise salad and chose to cook this.

This vegan Nicoise salad is a filling meal by itself. It has all the necessary nutrients that you would need in a meal. The saw vegetables that are added gives the necessary crunch and texture to the salad. The chickpea adds to the taste and the flavouring is added by thyme and the dill powders. Since fresh thyme was available, I have used it instead of thyme powder

By varying the ingredients we can get many versions of this salad. you can choose to add tuna, avocado, cooked beans, cooked potato, black olives and green olives. I have also seen parmesan in one of the variants. The choice is innumerable when you are creative.

Done

Boil potatoes until it is soft. Let it cool completely. Remove the skin and dice it into small pieces.

Cut the beans into 2" piecesSteam the beans until soft. I pressure cooked it for 5 whistles without out adding extra water. Let it cool completely

Slice the onions very thinly

Cut the cherry tomatoes into halves

Cut the olives into half and remove the seeds

Drain the chickpea and keep aside

Mix all the ingredients under the dressing in a bowl. Whisk well

Transfer all the ingredients into a bowl. Mix well and serve. Taste it and adjust the salt accordingly

Thats a fabulous take on Salade Nicoise, i cant imagine this salad without eggs and anchoives, nice pick for the theme Veena. And love this vegan version. Incredible salad.

This is such a classic French recipe and every cooking school teaches how to make this salad though I’ve never made the vegan version I am sure it is delicious for those who dont eat the fresh tuna which is customarily how it is made here
