    While I was browsing Pinterest, this picture popped up on my feed. The colours in the salad and the fresh ingredients used captured my attention, so I knew I had to make this salad as soon as possible. All the ingredients are easily available and I had this spice from the middle east-Sumac. So putting together this fresh and colourful vegetable Israeli Salad was a breeze. This salad uses cooked chickpea. But when Sruti was travelling recently from Pune, she was kind enough to carry fresh chickpea for us. I am very lucky that I am blessed with kids who go that extra mile to see that I have something new and fresh for my blog whenever they can. Cannot thank them enough

    FRESH AND COLOURFUL VEGETABLE ISRAELI SALAD

    We as a family can have salad as a meal. Our diet chart also demands that. But sometimes the regular salads become a little monotonous and boring and these new flavours add the necessary zing to the salad. Do you also have salad as a meal? Do share your creations too, so that I can make it and relish it.

    Adding new ingredients and flavours to our regular vegetable salads make it very interesting. Here, I have added our own cottage cheese to the salad to add to the protein. I love to add paneer in fresh form in may dishes. The most recent one with fresh paneer is this Carrot Paneer mousse which is a savoury mousse. You will love this savoury mousse as much as I do. Have you tried it as yet? The paneer that I have used here is fresh homemade paneer. I like the texture of homemade paneer. If it is not available you can choose to use the store bought paneer as well. If you can source feta, it is a great option to use it in this salad too.

    INGREDIENTS IN THIS COLOURFUL VEGETABLE ISRAELI SALAD

    Fresh green chickpea is not available around the year, It is fresh produce and is available only in some parts of India. In such a case, you can use chickpea soaked overnight and cooked the next day or if you are short of time, you can use the canned chickpea as well. The tomatoes that are used in this salad is a cherry tomato. Let the non-availability of this not deter you from making this salad. Go ahead and use the regular tomatoes. The other ingredients are our humble cucumber, onion, parsley which you will get very easily. You can add mint and coriander along with parsley to give the extra flavour-our desi flavour.

    The other visually appealing salad which I love to make often is this Layered salad and Cabbage salad with strawberry vinaigrette.
