.Strawberry and more strawberries, You see strawberries in every grocery shop. Earlier it was available only in some upmarket shops catering to the expats. Now with the good produce from Lonavala and Pune, there is no dearth of strawberries in Chennai. The good juicy ripe is too addictive. Every trip to the grocer, I pick a packet of strawberries with the idea of cooking a new dish, I see that I am short of strawberries for the recipe because we end up eating it just like that. So today I bought two packets. You guessed it right. I will eat some and make the dish too :). Yes, I finally decided to make this roasted pepper strawberry soup. This roasted pepper and strawberry soup is inspired by this post
Are you wondering as to why I am making a soup with a fruit? Well, the strawberry adds a very unique taste to this soup. You must have already seen in strawberry lassi and strawberry chutney on this blog. But a savoury dish is what I wanted to make and I should tell you that the roasted pepper gives a taste which is unique because of roasting and the taste of the strawberry take it to the next level
As I have always stated I love to use my kitchen appliances judiciously. The point is not to stress ourselves while cooking but rather make it effortless and time-saving. All our time need not have to spend in the kitchen. So simultaneously using the appliances that I have in my kitchen is what I do most of the times. Here while I chop the onion, tomatoes and strawberry for the soup, I roast the pepper in the air fryer. You just have to dump it in, set the timer and go on with your other work.
Next, I use my wonderchef Nutri-pot or instapot to make the soup, because you just have to saute, then dump everything in it, put it on soup mode and forget it. While soup is cooking, I can cook other dishes. I then just have to blend it with a blender and serve the roasted pepper and strawberry soup warm to my family.
While the whole world is making pink and red coloured dishes for their valentine, I am dishing out this hearty soup with all the goodness of strawberry to them. Incidentally, everyone is away at work but this soup and this post is for them. While both do not approve of strawberry, I am sure they see my love for them here. Love you most Vibha and Sai.
Chop the onions, garlic, tomatoes finely. Chop the strawberries into 2
Heat oil in the inner vessel of instapot/ Nutri-pot in the saute mode
Once the pressure has released, remove the bay leaf and blend it with a blender.
Transfer it to a serving bowl. Add the required amount of pepper powder to spice it up,op it with fresh strawberry and some nuts and enjoy your meal
