Carrot masoor dal soup is a soup rich in antioxidants and beta carotene. Children and adults will love to have this delicious soup

Carrot masoor dal soup

This soup is very delicious and has a lovely orange colour which makes it very interesting for the kids. You can add other vegetables to this soup and there will be a slight variation in the taste and texture. You can add steamed vegetables and different flavours to suit your taste. Since this soup has both lentils and vegetables, it becomes a meal on its own. A bowl of this soup with some some baked bread is heavenly.

Soak the dal for 10 mins. Wash it thoroughly and. Add enough water and cook in pressure cooker uoto 3 whistles. Let it cool completely. Mash well and keep aside

Add the ghee in another pressure pan. When it gets sufficiently hot, add the onions and garlic. Saute till it becomes transparent. Now add the carrot and enough water and pressure cook upto 2 whistles. Let it cool completely. Now grind it into a smooth paste and transfer it back to the pressure cooker

Add the mashed dal and necessary salt and chilli flakes and cook on low flame for 3 minutes

Now add the milk, boil it for a ,minute and switch off the fire. Serve warm

Hearty soup for winters! I have similar mug and am always hesitant to serve food in it. It has nice rustic look and I should use it more often.

Hearty soup for winters! I have similar mug and am always hesitant to serve food in it. It has nice rustic look and I should use it more often.
