1 Onion chopped
10 Cherry tomatoes chopped
1 Green chilli chopped
1 Avocado pulp chopped
1 tbsp Lemon juice

Chimichurri is said to have its origin in Argentina. The flavours are predominantly of garlic and parsley. The addition of quinoa to this salad makes it wholesome. The original recipe can be seen here. Chimichurri quinoa salad is a very healthy one bowl wholesome salad. Colourful and easy to whip up too.

Cook quinoa until soft. I pressure cooked it for 3 whistles.
