Rajasthani cuisine is not very regular in my house. Well, I should say that this is the first recipe in my blog too. Wonder why I kept myself away from cooking other cuisines. Anyway, there is always a first and today I cooked my first dish from Rajasthani cuisine, the Rajasthani Dal Dhokli.

Rajasthani dal dhokli

For this month, the chosen theme of shhh cooking secretly was Rajasthan cuisine and I have been paired with Archana who blogs at The Mad Scientist kitchen. Hop over to her blog and the first thing that will strike any reader is her simple and healthy recipes for the elderly and her Goan delicacies. For this theme, she suggested that I cook with moong and Kasuri methi. Well with so much of diet restrictions, The best dish I could think of was this Rajasthani dal dhokli. While I gave her the most common of ingredients -Besan and curds. She came up with this very delicious Pithore ki subzi. You can check out her post to know more about the subzi.

Rajasthani Dal Dhokli

Rajasthani dal dhokli is the Indian pasta. The pasta here is in the form of discs. The pasta or dhokli is made of wheat flour and gram flour. These discs are boiled along with the dal and the other spices. I came across this exquisite Rajasthani dal dhokli and I adapted her recipe to make this in the electric pressure cooker Nutripot

Steps

1
Done

Grate the ginger and garlic finely. Dice the onions, and tomatoes into small cubes. Chop the chilly finely

2
Done

Switch ON the nutripot. Press the saute mode

3
Done

Add ghee to the inner pot. Once it gets hot add the mustard seeds and cumin seeds. and bay leaf Let it crackle. Now add asafoetida and fry for 2 seconds

4
Done

Now add the ginger, garlic and chilly and fry for few seconds

5
Done

Add the cut onions and fry for 2 minutes. It will start to become transparent at this stage

6
Done

Now add the tomatoes and fry for another minute

7
Done

Now add turmeric powder, chilli powder, coriander powder, salt and mix well

8
Done

Add the dals and add 3 cups of water. Mix well

9

CANCEL THE SAUTE MODE. SWITCH ON THE MANUAL MODE AND CLOSE THE LID. PRESSURE COOK IT IN MANUAL MODE FOR 10 MINUTES. LET THE PRESSURE RELEASE NORMALLY

10
Done

Meanwhile mix everything for dhokli in a vessel and knead to a soft dough. Pinch small marble sized dough and flatten into discs. Keep each one seperate so that it dries a little till the dal is cooker

11

Now open the lid of nutripot, slowly add all the dhokli, mix well. Close the lid again and press the manual mode. PRESSURE COOKER IT FOR ANOTHER 5 MINUTES. LET THE PRESSURE RELEASE NORMALLY

Dal dhokri is a very common dish at my home as we simply love it. I see that the Rajasthani version is quite different, for one the different dals used and secondly the addition of kasuri methi. I’m definitely going to try out this version as it looks so yum.

Ah, another Nutripot recipe, so I must try it out on my little Nutripot too! I haven’t made dal dhokli before, but just 2 days ago had it for the first time at a Rajasthani friends house. I really enjoyed it and will try out your recipe soon.
