FOR THE CHICKPEA SALAD
1/3 cup Chickpeas/ Channa
1/3 cup Carrot (Grated)
1/4 cup Yellow Capsicum(cut finely)
1/4 cup Red Capsicum( Cut Finely)
5 Spring onions( Cut Finely)
1 tbsp Fresh Mint(Cut Finely)
1 tbsp Fresh Coriander( Cut Finely)
2 Tbsp Egg free Mayanaisse
2 tsp or more English Mustard sauce
1 Lemon
3/4 tsp Salt Adjust the quantity according to your taste
FOR THE GRILLED TOAST
8 slices Bread
1 cup Chickpea vegetable salad
2 tbsp Butter

Do you like salads? Do you like sandwiches? If yes is your answer, then this Chickpea salad grilled sandwich will be perfect for your breakfast. I am not a sandwich lover. Bread is a secondary option for me. But my daughter seems to have this new liking to sandwiches. And on her request, I thought, why not make a filling sandwich which will be to her liking and I hope she loves this.

Chickpea Salad Grilled Sandwich

I love to make salads. I can just live on salads and soups. Though chickpea salad is not very regular at home, sometimes I use chickpea to make sundal which is a salad in itself. Cooking the chickpea to perfection is most important. If you under cook, the salad will be too crunchy and you will not relish it. If you overcook then it will become mushy. Though in this grilled sandwich being on the mushier side is preferred.

In this sandwich, I have used cooked chickpea. I have soaked and cooked them. You can choose to use the canned ones too. The vegetable that I have used here are carrots, yellow capsicum, red capsicum, spring onions, coriander and mint. The sauce that is used in this salad is the eggless mayonnaise and English mustard sauce. This salad and the sandwich are very easy to prepare and very filling too.

Soak the chickpea overnight in enough water. Let it soak for around 10-12 hours. Next morning drain it completely. Wash well and cook it in enough water with 1/2 tsp salt for around 12 whistles in pressure cooker or for 15 minutes in instapot. Drain the water. Mash it lightly. Keep aside

Now cut the vegetables finely and grate the carrot

Add the prepared vegetables to the cooked and mashed chickpea

Now add mayonaisse and mustard sauce to the chickpea vegetable mixture

Add the required quantity of salt, lemon juice. Mix well to prepare the delicious chickpea vegetable salad

Now heat the toaster. Apply butter and keep a bread slice on it. Keep a good amount of the salad as the filling, top it with another layer of bread and apply butter on it. Close the toaster and grill it browns on both sides
