Paneer ghee roast is a famous dish from Mangalore cuisine. This becomes even more flavourful and delicious when you make this paneer ghee roast in instant pot. This is a very important dish in coastal cuisine. This paneer ghee roast gets its name from the ghee that is used to roast the paneer. Are you wondering if the same taste and flavourful is possible when cooked in an electric pressure cooker? Well yes. It is. What is paneer ghee roast?

Ghee roast is a dish every Mangalorean can relate to. The ghee roast was initially a meat dish. It was the chicken ghee roast where the meat pieces are marinated in a special spice mix from kundhapur. Then these are roasted in ghee with a generous amount of curry leaves to prepare the kundapur ghee roast. Hence the flavours are bursting in this dish. We vegetarians did not want to lose out on this special masala. Hence the vegetarian version which is born is this paneer ghee roast.

Now let us see how to make this delicious paneer dish in an instant pot. The purpose of making this paneer ghee roast in an instant pot is to reduce the time of cooking. Since you are cooking the panner marinated in the masala under pressure the flavours are intense and the taste is awesome. Here in this recipe, we do use a liberal amount of ghee. Do not go scantily on this as this ghee gives the authentic flavour and taste to the dish.

What is the masala used here?

Here we make use of simple ingredients which we use daily. The ingredients used are coriander seeds, cumin seeds, red chillies, a little of cumin, pepper and fenugreek seeds. We will grind this along with roasted garlic and tamarind. Then we will marinate the paneer pieces in this flavourful masala along with some curd.

Preparation of paneer ghee roast in instant pot:

The first part of the preparation of the masala.

  • All the masala spices are first roasted in ghee.masala roasting
  • Then we will add the garlic which gives a wonderful flavour to the dish and saute in the ghee.garlic for masala
  • Now we will add the required amount of tamarind and salt and grind into a smooth paste.kundapur masala
  • Once the masala is ready, we will add the paneer pieces to this along with curd and marinate it for a while. This helps the flavour to steep in.marinate paneer in masala
  • The next step is to saute the onions with curry leaves in ghee in the instant potonions and curry leaves sauteed for ghee roast
  • Place a trivet into this and keep the paneer bowl in this as a PIP method.PIP in instant pot

Ingredients
  

FOR THE MASALA

  • 2 tsp Coriander seeds
  • 1 tsp Cumin seeds
  • 1 tsp pepper corn
  • 3 Red chillies
  • 1/4 tsp Fenugreek seeds
  • 2 clove garlic
  • 1 marble sized Tamarind
  • 2 tsp ghee

FOR THE PANEER GHEE ROAST

  • 1 tbsp Curd
  • 200 gms Paneer
  • 2 tbsp ghee
  • 1 Onion
  • Few Curry leaves
  • To Taste Salt

Instructions
 

For the masala

  • Roast coriander seeds, cumin seeds, fenugreek seeds, pepper corns and red chillies in ghee till a good flavour comes out. Take it out and keep it aside.
  • In the same pan add the garlic and roast well. Add it to the roasted masala spices
  • Transfer all this to the jar of a mixer, Add tamarind and salt and grind into a smooth paste with little water,

FOR THE MARINADE

  • Cut the paneer into small pieces.
  • Add the panner, masala paste, turmeric powder and curd to a bowl. Mix well and keep aside for 15 minutes

FOR THE PANEER GHEE ROAST

  • Cut the onion finely
  • Switch on the instant po in the SAUTE MODE
  • Once hot add the ghee
  • Now add the onions and saute for 2 seconds
  • Add the curry leaves and salt
  • CANCEL THE SAUTE MODE
  • Keep a trivet inside
  • Place the bowl with the marinated paneer on this
  • Close the lid of the instant pot. Keep the event in the sealing position
  • Pressure cook it for 2 minutes
  • Realse pressure immediately
  • Mix paneer with roasted onion and serve warm
