Roasted beet and carrot salad

 For the third day of salad’s it is my favourite,
roasted vegetable salad. I have roasted beets and carrots which gives a slight
sweetish taste and dressed it with sweet plum sauce  to enhance the sweet and tangy taste with the
flavour of the plum

INGREDIENTS
Beet
1
small
Carrots
2
Olive
oil
1tbsp
Salt
1/2
tsp
Pepper
powder
1tsp
Sweet
plum sauce
As
required
 
PREPARATION
Cut both the beets and carrots into small cubes
Preheat the oven to 220C
Mix the cut vegetables, olive oil , salt and pepper
powder in a container till the oi coats the vegetables well
Now transfer this to a baking tray which is lined
with a baking sheet, and make sure there are in a single layer
Bake for 25-30 minutes
Let it cool
Layer a lettuce leaf on a serving plate
Transfer the roasted veggies on to it.
Drizzle with the plum sauce and serve

NOTE: you can drizzle the sauce of your choice
