Sai Bhaji

This is one of those palak dishes that my daughter will eat without a fuss. It has the vegetables and greens and dal, so I would say, it a perfect blend for a very healthy side dish. The recipe is from Tarla Dala’s book :Swadisht Subziyan
Spinach(chopped)                3 cups
Onion (chopped)                 1
Carrot(cubed)                     1
Potato(cubed)                     1
Brinjal(cubed)                    1
Ginger garlic paste             2 tsp
Coriander powder              3 tsp
Chilli powder                    1tsp
Turmeric powder               1/4 tsp
Oil                                      2 tsp
Salt                                    to taste
Soak the gram dal in water for 1/2 hr
Clean the palak well, chop it finely. Keep aside
Now all the vegetables finely too
Heat oil in a pressure cooker. Now add the cumin and when it starts sizzling add the onions and aute in low flame till it becoes transparent
Now add the other vegetables and chillies and continue to saute for 1 minute
Add the ginger garlic paste, mix well and cook for 1 minute
Now add the turmeric powder, chilli powder and coriander powder, mix well and then add the soaked gram dal, mix well
Add 3/4 cup of water , add salt, mix well, close the pressure cooker and then cook upto 3 whistles.
Once the pressure is released , open the cooker, mash everything with a masher and cook in low flame for 1 minute
Serve hot with roti’s!!
